Ingredients
Cinnamon Brown Sugar Crumble:
- ¾ cup Farm2Flour All-Purpose Flour
- 1 teaspoon ground cinnamon
- 2 Tablespoons granulated sugar
- ¼ cup light brown sugar
- 4 Tablespoons unsalted butter, melted
Apple Cinnamon Muffins:
- 2.5 cups Farm2Flour All-Purpose Flour
- 1 teaspoon ground cinnamon
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup light brown sugar
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
- ¼ cup plain greek yogurt
- 2 large eggs
- 1 teaspoon pure vanilla extract
- ½ cup milk
- 1 ½ cups diced apples (Honeycrisp or apple of your choice)
Directions:
Cinnamon Brown Sugar Crumble:
- Prepare the crumble topping by combining the flour, cinnamon, brown sugar and granulated sugar in a small bowl.
- Pour in the melted butter and mix until small clumps form.
- Set aside.
Apple Cinnamon Muffins:
- Preheat the oven to 400°F. Grease a 12 cup muffin tin or line with paper liners.
- Prepare the crumble topping by combining the flour, cinnamon, brown sugar and granulated sugar in a small bowl. Pour in the melted butter and mix until small clumps form. Set aside.
- Mix the dry ingredients for the muffins. Stir flour, cinnamon, baking powder, and salt together in a medium bowl. Set aside.
- Using a mixer beat together sugar's and softened butter until light and fluffy. Add greek yogurt, eggs and vanilla extract, mixing until well combined.
- Combine the wet and dry ingredients by adding half of the flour mixture to the wet ingredients and mixing until just combined. Pour in the milk and mix again, then add the remaining flour mixture and mix just until incorporated. Gently fold in the diced apples by hand.
- Fill the muffin cups by dividing the batter evenly among the prepared muffin cups, about ¾ of the way full. Sprinkle the crumble topping over each muffin, ensuring that you use all the mixture.
- Bake at 400°F for about 20 minutes or until a toothpick inserted into the center comes out clean.
