Ingredients
- 2 cups Farm2Flour Pastry Flour
- 1 tablespoon baking powder
- 1 teaspoon fine sea salt
- Β½ teaspoon baking soda
- 6 tablespoons unsalted butter, very cold (cut into small cubes)
- ΒΎ cup buttermilk
Directions:
- Preheat your oven to 425Β°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the pastry flour, baking powder, salt, and baking soda.
- Add the cold butter cubes and cut them into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Create a well in the center and pour in the buttermilk. Gently mix just until the dough comes together. Be careful not to overmix.
- Turn the dough onto a lightly floured surface and gently pat it into a 1-inch-thick rectangle. Fold the dough in half, rotate it, and pat it down again. Repeat this folding process 2-3 times to create layers.
- Roll or pat the dough to about 1-inch thickness. Use a round cutter to cut out biscuits, pressing straight down without twisting. Re-roll scraps as needed, but handle them minimally.
- Place biscuits close together on the prepared baking sheet for soft sides, or 1 inch apart for crisper edges.
- Bake for 12-15 minutes, or until the tops are golden brown.
- Brush with melted butter (optional) and serve warm.
