Ingredients:
- 1 ¼ cups Farm2Flour all-purpose flour
- 1 cup Farm2Flour bread flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 3 ½ to 4 ounces cubed fresh mozzarella cheese
- 2 tablespoons chopped fresh basil
- 2 large eggs
- 2 ½ tablespoons extra virgin olive oil
- 1 ¼ cups buttermilk
Directions:
- Preheat oven to 350°F.
- Grease an 8x4-inch pan.
- Combine flour, baking powder, baking soda, and salt in a large bowl. Mix well.
- Add basil and mozzarella to the flour mixture.
- In a separate bowl, whisk eggs, oil, and buttermilk until smooth.
- Combine wet and dry ingredients. Mix until dough is formed. NOTE: Dough will be sticky.
- Transfer the dough to the prepared pan, spreading out evenly.
- Bake for 40-45 minutes.
