Soft, tender, and loaded with the rich flavor of ripe bananas, this Classic Banana Bread is a timeless recipe that’s easy to make and hard to resist. Crafted with either our Organic Pastry Flour or our Organic All-Purpose Flour, it’s a treat that’s perfect for breakfast, dessert, or an anytime snack.
Ingredients:
- 2 cups Farm2Flour Pastry Flour or All-Purpose Flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 large eggs, room temperature
- 3 large ripe bananas, mashed
- ¾ cup granulated sugar
- ½ cup unsalted butter, melted
- ¼ cup Greek yogurt or buttermilk
- 1 teaspoon vanilla extract
Directions:
- Preheat the Oven: Set your oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
- Combine Dry Ingredients: In a medium bowl, whisk together Farm2Flour Pastry Flour, baking powder, baking soda, cinnamon, and salt.
- Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, eggs, sugar, melted butter, yogurt (or buttermilk), and vanilla extract. Stir until smooth and well combined.
- Combine Wet & Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, mixing just until combined. Avoid over-mixing to keep the bread tender.
- Bake: Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & Serve: Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy warm with butter!
