Fresh Flour French Baguettes — Made Easy!

This recipe is your gateway to baking authentic French baguettes at home—light, crisp, and full of rustic charm. Made with our Organic “00” Pizza Flour, these baguettes deliver the perfect balance of a crisp, golden crust and a soft, airy crumb. Whether served with butter, dipped in soup, or as a sandwich base, these artisan loaves are sure to elevate your bread game.

Ingredients

  • 3 ¾ cups (450 g) Farm2Flour "00" Flour
  • 1 ½ tsp fine sea salt
  • 1 tsp granulated sugar
  • 1 tsp active dry yeast
  • 1 ¼ cups (300 ml) warm water (110°F)

Directions:

  1. Activate Yeast: Combine warm water and sugar in a small bowl. Sprinkle the yeast on top and let sit for 5-10 minutes until foamy.

  2. Mix the Dough: In a large bowl, mix flour and salt. Add the activated yeast mixture and stir until a rough dough forms.

  3. Knead: Knead the dough by hand on a floured surface for 8-10 minutes or with a stand mixer on low speed for about 7 minutes, until smooth and elastic.

  4. First Rise: Place the dough in a lightly oiled bowl, cover, and let it rise at room temperature for 1 hour.

  5. Stretch and Fold: Gently stretch one side of the dough upward and fold it over the center. Rotate the dough and repeat on all sides. Let rest for 45 minutes and repeat the process.

  6. Shape the Baguettes: Divide the dough into 3 pieces. Shape each into a rectangle, fold the edges inward, and roll into a log, tapering the ends for a traditional baguette look.

  7. Second Rise: Place the shaped baguettes on a floured baguette pan or lined baking sheet. Cover loosely and let rise for 30-45 minutes.

  8. Prepare for Baking: Preheat the oven to 475°F (250°C) and place a shallow pan of water on the oven’s bottom rack for steam. Score each baguette with diagonal slashes.

  9. Bake: Bake the baguettes for 20-25 minutes until golden brown and crisp, spraying water into the oven during the first 5 minutes for extra crunch.

  10. Cool: Let the baguettes cool completely on a wire rack to set the crumb.
