Fresh Lemon Bars

Made with our Organic Pastry Flour, the crust is tender yet crisp, providing the ideal base for a silky, lemon filling. Ingredients:

For the crust:

  • 1Β½ cups (180g) Farm2Flour Pastry Flour
  • ΒΌ cup powdered sugar (plus extra for dusting)
  • ΒΌ teaspoon salt
  • Β½ cup unsalted butter, softened

For the lemon filling:

  • 4 large eggs
  • 1ΒΌ cups granulated sugar
  • 2 tablespoons (15g) Farm2Flour Pastry Flour
  • Β½ teaspoon baking powder
  • Β½ cup freshly squeezed lemon juice (about 3-4 lemons)
  • zest of 1 lemon
  • pinch of salt

Directions:

Prepare the crust:

  • Preheat your oven to 350Β°F (175Β°C). Line an 8x8-inch baking dish with parchment paper or lightly grease it.

  • In a medium bowl, whisk together the pastry flour, powdered sugar, and salt.

  • Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Alternatively, use a food processor.

  • Press the dough evenly into the bottom of the prepared baking dish to form a crust.

  • Bake for 15-20 minutes or until lightly golden around the edges. Remove from the oven and let cool.

Prepare the lemon filling:

  • In a separate bowl, whisk together the eggs, granulated sugar, Farm2Flour Pastry Flour, baking powder, lemon juice, lemon zest, and a pinch of salt until smooth.

Bake the lemon bars:

  • Pour the lemon filling over the cooled crust.

  • Bake for 20-25 minutes or until the filling is set and the top is slightly golden. A toothpick inserted into the center should come out clean.

  • Allow the bars to cool completely in the pan on a wire rack.

Serve:

  • Once cooled, dust with powdered sugar.

  • Slice into squares and enjoy!
