This pizza dough is New York perfectionβ€”thin, crispy, and utterly delicious. Made with our freshly stone-milled Organic "00" Pizza Flour, it’s your key to achieving pizzeria-quality pizza right at home.

Ingredients

  • 1 ΒΎ cups (425 g) cold water
  • 1 tbsp (18 g) sugar
  • 2 tsp (6 g) active dry yeast
  • 3 tbsp (42 g) olive oil
  • 5 cups (680 g) Farm2Flour 00 pizza flour
  • 1 Β½ (9 g) tsp salt

Directions:

  1. Activate Yeast: In a bowl, combine cold water and sugar. Sprinkle yeast over the top and let sit for about 5 minutes until it begins to dissolve and foam.

  2. Mix Ingredients: Add olive oil and about half of the Farm2Flour β€œ00” pizza flour to the water and yeast mixture. Stir to combine until smooth. Gradually add the remaining flour and salt, mixing until a rough, sticky dough forms.

  3. Knead the Dough: Knead by hand or with a dough hook on low-medium speed for 7-10 minutes until the dough becomes smooth and elastic. The dough should be soft and tacky but not too sticky.

  4. First Rise: Transfer dough to a lightly oiled bowl, cover, and let it rest at room temperature for 30 minutes.

  5. Cold Fermentation: Place the covered bowl in the refrigerator to ferment for at least 24 hours (up to 72 hours for a deeper flavor). This slow fermentation enhances the dough’s texture and flavor, resulting in a light, crisp crust with a perfect chew.

  6. Portion Dough Balls: After fermenting, divide the dough into 3 equal pieces (approximately 11 oz each). Roll each piece into a tight ball, place in separate oiled containers, and let sit at room temperature for 1-2 hours.

  7. Prepare & Shape Dough: Preheat your oven to its highest setting (usually 500-550Β°F) and preheat a pizza stone if available. Working on a floured surface, gently stretch each dough ball to a 14-inch round without deflating the air bubbles. Use your fingertips and hands, avoiding a rolling pin for the best crust texture.

  8. Top & Bake: Place the stretched dough onto a pizza peel dusted with flour or cornmeal. Add your desired toppings, then carefully transfer the dough to the preheated stone. Bake for 10-15 minutes, until the crust is golden and crispy.
