Milled fresh from a blend of heirloom (non-hybridized) and non-heirloom (hybridized) grains, this flour has a protein content of 8% to 9%, making it perfect for creating light, flaky textures in pastries, cakes, and cookies. The low protein content allows for fine crumb structures, making your baked goods melt in your mouth.

Our flour comes from organic wheat grown without harmful chemicals, including glyphosate or other synthetic herbicides, and is never sprayed with pesticides or fungicides. Unlike most commercial flours, we never add synthetic chemicals, bleach, or additives like folic acid or bromate to our flour. What you get is flour in its purest form—just as nature intended.
